Environment and Architecture

We have a unique geographical setting, a favourable climate and a winemaking culture sculpted over time in the land, the plants and the people.

The winery is located in Briñas, 2 km from Haro, in one of the most traditional wine-growing areas of La Rioja, on a hill surrounded by the River Ebro, at the foot of the Sierra Cantabria mountain range, from where we enjoy beautiful views of the Obarenes Mountains, the Conchas de Haro and the Riscos de Bilibio.

We have a unique microclimate, ideal for growing vines, caused by the influence of the mountains to the north and the Ebro River to the south.

The Tobelos project was born in the last decade of the 20th century, and together with the project, our building, a symbol of modernity was born.

The building was constructed respecting the location of an ancient holm oak, which in turn gave the winery its name, thus symbolising our reverence for nature.

The building provides the necessary facilities and space to house the latest technical innovations required throughout the wine making process. It also provides the comfort for our customers to enjoy tastings, meals in our restaurant, walks in the surroundings… and unforgettable experiences.

HISTORY

Silence and time tend a thread,
connecting the work of the monk in his scriptorium
and a crianza from Tobelos.

This story, like all great stories, was born in a veiled way, by the hand of the monks in the darkness and silence of their scriptorium, in the shelter of the Sierra Cantabria.

Our symbol represents the capitular of the first written reference in which the word “Rioja” appears, discovered in the document “La Redonda de Logroño, 1293”. The verses that accompany our wines have been composed with letters retrieved from the earliest known manuscripts in the Castilian language.

HARVEST
So many small plots
allow us to carry out
the first selection in the vineyard.

The harvest plays a decisive role in the process of making these great wines. For this reason, the obsession for quality at Tobelos, Winery and Vineyards, begins at the moment of harvesting.

The vineyards are located on land around the winery, where traditional viticulture has been practised in small plots, with manual green pruning: debudding, shoot thinning and the use of manual harvest.

Once the tasting and analysis of each plot has been carried out, we will set the harvest of each plot at its optimum ripening time.

In this way we can pre-select which wine each plot will be used for, depending on the characteristics of the grapes it bears each year. The grapes are harvested by hand and the bunches are taken from the vine to the box, where they arrive intact at the winery. The boxes full of grapes will rest in the cold storage room for a day, in order to cool the berries before going through the manual selection table.

The delicate treatment of the grapes is vital for the development of the wine.

The boxes of grapes are turned by hand onto a conveyor belt where the first visual check is carried out. The bunches of grapes that pass this sifting process reach the manual selection table where a second, more exhaustive control is carried out.

The grapes selected to enter the winery will go through the destemmer, where the stems will be removed and only the loose grapes will reach the fermentation tank in perfect condition.

WINEMAKING
We carry out complex elaborations
to preserve the typicity of the grape of each plot.

For us it is essential to vinify the plots as far apart as possible for two reasons:

To maintain traceability, and in the long term, to know the potential of each vineyard.

Making wine in such a fragmented way gives us many tools when it comes to defining our future wines.

For the winemaking we play with stainless steel vats, concrete vats and wood vats (4.000l. foudres, 500l. oak casks and also 225l. oak casks).

The storage tanks, made of concrete, preserve the wine by insulating it thermally with their thick walls and avoid electrostatic charges, favouring the clarification and stabilisation of the wine.

MICROVINIFICATION
We tested different microvinification techniques
in order to develop new wines.

A complete winery of very small dimensions, where our oenologist tests different winemaking techniques and where potential new wines are developed, both for its different soils, as well as for different varieties or different ways of handling viticulture. It is a commitment to R+D+I.

The micro-vinification cellar is a small dedicated space with the necessary equipment to test new elaborations.

AGEING
In silence, 800 oak casks,
they imprint character into our wines.
The unmistakable hallmark of Tobelos.

Under a respectful silence, 800 mostly French oak casks rest. The oak casks are renewed every four years and chosen with great care. Later the wine will rest in a bottle rack where it will complete its ageing and refining process.

Ageing on lees.
The lees are microorganisms, mainly yeasts and to a lesser degree bacteria. The first ones carry out the alcoholic fermentation and the second ones the malolactic fermentation. When both microorganisms have finished their activity, they die and decompose (autolysis). Ageing on lees is a technique that consists of keeping these sediments from autolysis, known as lees, in suspension in the wine. This process enriches the wines in terms of aromas and roundness. It can be carried out in oak casks “manual battonage” and in concrete eggs “auto battonage”.

Ageing.
The ageing is carried out, depending on the variety and plot, in 225l. and 500l. oak casks which we use for a maximum of 4 years for reds. We test each year with oak casks from different origins, woods, grains and toasts, in order to get the best out of each plot transformed into wine.
